Karrabool Olives Olive Oil Custard
1/2 Cup of Karrabool Extra Virgin Olive Oil
3 Large eggs at room temperature
1/2 cup of sugar
2 Tablespoons of lime zest
1/2 Cup lime juice (approx 3 large) (or orange or lemon or a mixture)
1/4 Teaspoon of vanilla
Simply blend the eggs and sugar until light and fluffy. Add the zest, juice and vanilla and give it a good whiz.
Then slowly drizzle in the oil (slowly, slowly) while blending.
Transfer to ramekins or bowls or tea cups even and refrigerate covered in plastic for at least an hour or until set.
